Power Breakfast: Spinach Salad with Goat Cheese and Eggs!

I know most of us look for fast breakfast solutions during the week, especially on Mondays! This Powerful Salad takes exactly 8 minutes to make  - because this is how long it takes to boil an egg!

​​Ingredients and Preparation for one person serving of salad:

While the eggs are cooking, mix in the bowl the following ingredients - Hand full of Spinach, Couple of Branches of Finely Chopped Dill, Large Spoon of Goat Cheese, 2 Spoons of Olive Oil, Pinch of Himalayan or Sea Salt, Pinch of your favorite Salad Spices. Mix well for a minute so that goat cheese can break up in the olive oil and coat the greens. Slice the egg and lay it out on top of the salad. My salad in the picture is garnished with our home grown Kale Micro Greens. Ready to Serve!

Goat cheese is an awesome alternative for people who have dairy sensitivities or allergies. Goat cheese contains less lactose than cow's milk and cheese, and offers smaller fat globules, which make the cheese easier to digest. 

Vitamins and Minerals in Goat Cheese: Goat cheese is higher in vitamins D, K, thiamine and niacin than a serving of cow's cheese. A serving of goat cheese has the same amount of vitamin A as cheddar cheese, with 6 percent the daily value. Goat cheese is also high in the B vitamin riboflavin, as well as the mineral phosphorous. Goat cheese provides a source of these micronutrients.

Goat cheese is low in calories! 1 oz serving of a typical brand of goat cheese contains 70 calories, 45 of which are from fat in comparison to 1 oz of  serving of a cheddar cheese, that contain 110 calories of which 80 calories are from fat.

Goat Cheese is is low in Saturated Fat and Cholesterol. Goat cheese contains half the saturated fat with 3 g per serving, compared to the 6 g of cheddar cheese. Cheddar cheese contains 25 mg of cholesterol per serving, while goat cheese contains none.

Goat Cheese has Low Sodium. Goat cheese contains 65 mg of sodium per 1 oz. serving, while a serving of cheddar cheese contains about 170 mg.

Goat Cheese is A Source of Protein: A serving of goat cheese contains 4 g of protein. The Institute of Medicine recommends that women consume at least 46 grams of protein a day and men consume at least 56 grams.
